Pumpkin Chocolate Chip Bread post under vegan recipes

This is the best pumpkin bread I have ever baked! It tastes indulgent, but I promise it’s guilt free (as long as you don’t eat the entire thing in one go!).

When creating healthy baking recipes, I usually find a basic recipe on the back of a flour bag and work off of that. It helps to know how much to start with to make a serving. I use whole wheat spelt flour which is much easier for the stomach to digest than regular flour. Spelt flour also helps boost the body’s metabolism and—ready for this?—aids in the creation of sex hormones! Don't be afraid of the whole wheat flours either; taste is not compromised!

Ingredients

  • 1 and 1/2 cups whole wheat spelt flour

  • Generous shake of cinnamon

  • 1 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 2 eggs (or vegan egg replacement)

  • 1/2 cup honey (maple syrup, agave nectar, etc.)

  • 1/2 avocado

  • 1 can 15 oz organic pumpkin puree

  • 2/3 cup vegan dark chocolate chips or cacao nibs

Directions

  1. Preheat the oven to 350° F. Mix all the ingredients together and grease a bread pan with some coconut oil. 

  2. Bake for 30 minutes, checking regularly. Make sure to be conservative with your timing while baking, checking with a toothpick every few minutes once the 30 minute mark has passed.

  3. You want it completed baked, but still moist and not overdone. ENJOY!

My favourite part of this recipe is replacing any butters and oils with half a ripe avocado. This gives a creamy consistency to the bread. Make sure to really mash it into the batter to avoid green chunks. Avocado is a healthy fat that aids in weight loss as well as muscle recovery. In my opinion, it’s a must have in everyone's diet.

Honey gives a subtle sweetness and also helps add creaminess to the batter. Did you know that honey is known to boost memory? Yup! Along with being packed with niacin, riboflavin, calcium, and iron, honey may even help you remember where you put your keys!

I love using dark chocolate chips. They’re filled with antioxidants and add a tart-sweetness which compliments the pumpkin flavor. If you are vegan, cocoa nibs are a great replacement.
